Cook Time: ~15 minutes
1 1/2 tsp Ground Cumin
1 tsp Smoked Paprika
1 tsp Ground Coriander
1/2 tsp Kosher Salt
1/2 tsp Black Pepper
1/4 tsp Ground Red Pepper
4 (6-ounce) Boneless Chicken Breast
2 tsp Olive Oil
1/2 Cup Chicken Stock
1) Combine cumin and the next 5 ingredients (through 1/4 teaspoon red pepper); rub evenly over chicken. Preheat oven to 400 F.
2) Heat a large ovenproof skillet over medium-high heat. Add oil to pan; swirl to coat. Add chicken to pan; cook 3 minutes.
3) Turn chicken; place pan in oven. Bake for 10-12 minutes or until chicken is done.
4) Remove chicken from pan. Add broth to pan; bring to a boil. Cook until liquid is reduced to 1/4 cup (about 2 minutes). Spoon sauce over chicken.
