Cook Time: ~25 minutes
1 Lb Self Raising Flour
1tsp Baking Soda
4 oz cold butter, diced
2 Tbs Caster Sugar (Pulse sugar in food processor 3-4 times)
1 1/4 Cups Buttermilk
2 Tbs Milk
2 tsp Vanilla Extract
1/2 tsp Salt
Optional 4 oz glace Cherries
1) Preheat oven to 425 F. Mix flour, salt, baking soda, cherries if using and butter in a bowl work with fingers until mixture resembles bread crumbs.
2) Quickly mix in buttermilk, a splash of milk, vanilla extract. Mix until a soft dough forms.
3) Press out dough on a lightly floured surface to about 1 1/2 inches, cut out with 2 1/2 inch cutters.
4) Transfer to baking sheet and brush scones with remaining milk. bake for 12-15 minutes until golden brown. Eat warm with jam or clotted cream.
