Cook Time: 30 minutes
Ingredients:2 Ripe Avocados
2 Large Eggs
Panko Bread Crumbs
1) Cut avocados into slices. Preheat oven to 425 F
2) Season Avocado slices with salt, pepper, and cayenne pepper. Bread avocado slices by first dredging them in flour, then placing them in the egg, then placing them in panko bread crumbs.
3) Arrange on rack in oven safe pan. Place in oven and cook for 15-20 minutes, until golden brown. Serve with a chipotle mayo dipping sauce.
