Cooking Time: 15-20 minutes plus Overnight Marinating time
1 Chicken, Halved
1 red onion, chopped
1 1/2 teaspoons dried thyme
1 teaspoon ground allspice
1/2 teaspoon ground cinnamon
4 teaspoons white pepper
1/4 cup chopped green onion tops
2 teaspoons salt
1/4 teaspoon ground nutmeg
5 small jalapenos, or 4 Scotch Bonnet Peppers
2 tablespoons cooking oil (olive or vegetable)
Splash flavorful rum
1) Combine all ingredients except for chicken in blender and blend until smooth.
2) Put chicken in Ziplock bag then add Jerk rub. Marinate overnight.
3) Heat grill and cook chicken until done.
