Ingredients:
6 Cups Shrimp Shells or 4 Cups Lobster Shells, Crushed or 4 Cups Crayfish Shells
3 Tbs Vegetable Oil
1/4 Lb Raw Shrimp, Lobster, or Crayfish
1/2 Cup Mirepoix (Celery, Onion, and Carrot Mixture)
1 Tomato, Diced
1/2 Cup White Wine
1 Sachet (Thyme, Bay Leaves, Whole Pepper Corns, Cloves)
Directions:
1) Saute the shells in oil for 5 minutes, until they turn bright red.
2) Place all ingredients, including the sauteed shells, in a saucepan and add water to cover by one inch
3) Bring to boil, reduce heat and simmer 45 minutes to 1 hour. Strain.
