My dad is in a beer of the month club, and yes it’s the gift that keeps on giving the whole year. I used the Fordham Brewing Company’s Helles Lager as the base for a pan sauce to serve over chicken. To cook the chicken I seasoned it with salt and pepper, then cooked it until done in a pan. After the chicken was finished I sauteed shallots and garlic then deglazed the pan with the beer. I reduced it down by half then added the home made chicken stock. after reducing the mixture down to 3/4 I added whole grain mustard and heavy cream. The sauce was delicious and matched up well with the chicken. Aside from being great to cook with, the beers from Fordham brewing company are also great for drinking. Recipe Updates
I went back and updated two of the recipes. I just wanted to improve a few things from the first time I made them. Most of the improvements are small but make a big difference in the finished product. Enjoy!
Chicken Stock
Continuing on with my homework assignment from the cooking classes, I took the chicken carcass from the other night and made a chicken stock. The recipe is very simple, the only difficult part of the recipe is that it takes 4-5 hours to make. You can use the stock as a soup or you can use it in sauces or other dishes you decide to cook. If you have the time I would recommend trying to make your own chicken stock.
Siracha Shrimp Scampi
This Siracha shrimp scampi is a very simple yet very delicious dish. With just a handful of ingredients you get big flavor and while it does have some heat to it the lemon zest gives this dish a very refreshing finish. The sauce tastes very similar to a fra diavlo sauce and goes well served over pasta. This dish also makes a great appetizer if served on skewers. If you are short on time and are looking for a dish that brings the heat and big flavor I recommend trying this dish.
Parmesean Truffle fries with a Garlic Aioli
I know it’s been a few days since the Superbowl but here is the third dish I made on Sunday. I hand cut the fries and cooked them in the oil I used for the fried chicken. To cook the fries, fry them for 6-8 min then remove them from the oil and allow to cool. When ready to eat throw them back into the hot oil for 1 min. The oil should be between 350-375 degrees F. After you make the fries you can serve them however you wish. I sprinkled them with white truffle oil and Parmesan cheese and served them with a mellow garlic aioli I made the day before. You could also sprinkle them with old bay or melted cheese. I hope you guys are having a great Superbowl Sunday. For the game I made grilled shrimp po’boys with a blackened avocado relish. This sandwich brings a great Cajun flavor and is perfect for a Superbowl party. The game is starting so enjoy and have a good evening.
Crif Dog inspired Bacon Wrapped Hotdog with Avocado and Salsa
Hey guys, I just wanted to get a new post up before I left for NYC. Speaking of New York I was watching Anthony Bourdain’s show The Layover and saw this awesome hotdog from a place in Manhattan called Crif Dogs. It is a bacon wrapped hotdog, I like Nathan’s as my hotdog of choice, topped with fresh avocado and salsa. While this takes a bit longer than just throwing a hotdog in the microwave it is well worth it. The bacon, avocado, and salsa all compliment each other and really take this hotdog to the next level. This recipe isn’t on the Superbowl menu, however, if you are looking for something quick and easy to serve on Sunday this would be a great choice. Hope you enjoy!
