Hope everyone is doing well. I’ve been messing around with this recipe for a while now and have finally found the perfect balance between heat and flavor. While this soup is spicy it is in no way over powering. I have found that rib eye works best in this soup but skirt or flank steak can also be used. The most important part of making this soup is making sure it does not boil once the beef stock is added. If it boils the broth will become cloudy and the beef will be on the tougher side. Tonight I am posting my signature recipe. I have been making this dish for 4 years now and have tweaked it many times to get it to where it is now. The sauce is surprisingly healthy for a vodka cream sauce and only uses 1/2 cup of heavy cream. The addition of the crushed red pepper gives the sauce a subtle heat. You can modify the protein you want to use in this dish. I tend to make it with crab meat. If you use crab meat add it at the end right before you mix the sauce with the pasta. If you use an Italian ham like pancetta or prosciutto saute it with the onions in the beginning to get their flavor infused throughout the sauce. I highly recommend trying this dish. Like I said at the start of this entry this is my go to signature dish and is very special to me, I make it the night before I have a big race or other athletic event. I hope you enjoy it!

This morning, after digging out from the snow last night, I decided to take a stab at making bagels. I chose to try a basic egg bagel recipe that I put together from a few different recipes I found online. I was surprised at how easy they were to make and how great they looked when thy came out of the oven. Besides looking great they tasted god too. They were the prefect base for a ham egg and cheese breakfast sandwich and helped fuel me up after digging out the driveway. If you have time on a Saturday or Sunday morning I would highly recommend trying this recipe.

Siracha Shrimp Scampi

This Siracha shrimp scampi is a very simple yet very delicious dish. With just a handful of ingredients you get big flavor and while it does have some heat to it the lemon zest gives this dish a very refreshing finish. The sauce tastes very similar to a fra diavlo sauce and goes well served over pasta. This dish also makes a great appetizer if served on skewers. If you are short on time and are looking for a dish that brings the heat and big flavor I recommend trying this dish.

I know it’s been a few days since the Superbowl but here is the third dish I made on Sunday. I hand cut the fries and cooked them in the oil I used for the fried chicken. To cook the fries, fry them for 6-8 min then remove them from the oil and allow to cool. When ready to eat throw them back into the hot oil for 1 min. The oil should be between 350-375 degrees F. After you make the fries you can serve them however you wish. I sprinkled them with white truffle oil and Parmesan cheese and served them with a mellow garlic aioli I made the day before. You could also sprinkle them with old bay or melted cheese. It looks like Tuesday is becoming my experimental day in the kitchen. Today I was really in the mood for some kind of Asian dish but I couldn’t decide on what to make. In the end I decided to go with a spicy chicken and noodle dish. I found a few recipes for something similar to this but did not stick to one recipe tonight. The sauce is made up of garlic, ginger, soy sauce, rice wine vinegar, garlic chili sauce, and some sesame oil. I decided to use peppers and broccoli as the vegetable in this dish. The broccoli soaks up the sauce very well and tasted incredible. The rice noodles make this dish very light and do not fill you up like pasta would. Like I said I came up with this while I was messing around with your typical Asian ingredients so if you are going to give something like this a try just keep tasting throughout and it should turn out great.

I am continuing on with recipes from the Superbowl menu. Making the fried chicken was a bit of an adventure. I don’t have a deep fryer so instead I filled a pot with oil and used a meat thermometer to heat up the oil to the required temperature. However, all the trouble was well worth it. The chicken was crispy on the outside and moist and juicy on the inside. The spices in the coating added a nice flavor and heat. Hey guys, I just wanted to get a new post up before I left for NYC. Speaking of New York I was watching Anthony Bourdain’s show The Layover and saw this awesome hotdog from a place in Manhattan called Crif Dogs. It is a bacon wrapped hotdog, I like Nathan’s as my hotdog of choice, topped with fresh avocado and salsa. While this takes a bit longer than just throwing a hotdog in the microwave it is well worth it. The bacon, avocado, and salsa all compliment each other and really take this hotdog to the next level. This recipe isn’t on the Superbowl menu, however, if you are looking for something quick and easy to serve on Sunday this would be a great choice. Hope you enjoy!
