So after eating the enchiladas I made on Cinco de Mayo for breakfast, lunch, and dinner the last few days I decided I needed a change for dinner tonight. I went to the grocery store after work and just wandered around until something struck me. I walked past the meat case and saw some beautiful looking New York Strip Steaks. I Then came up with the idea to pair the steaks with a simple green peppercorn sauce. The sauce itself is very simple and you make it like you would an other pan sauce. Chicken with Wheat Beer Honey Reduction
This dish is a very quick and easy chicken dish with a simple pan reduction. I used Double White from the Southampton Publick House to make the reduction. The wheat beer and honey pair well together and make the sauce’s consistency more of a glaze. From start to finish this meal takes about 30 minutes to prepare and uses ingredients that are staples in a pantry. If you do not have shallots you can substitute with onions. Garlic Chicken with Mediterranean Couscous
Last weekend I was watching a show on The Food Network and saw this recipe. I made a few changes to it and you can find my recipe along with step by step pictures at the end of the post.
This recipe takes a bit of time with all the preparation and marinating times but the finished product is well worth the effort.
First you need to roast the garlic and make the paste to marinate the chicken. You do this by placing the garlic bulbs in the oven for 30 minutes at 350 F. Then you add all the ingredients into a food processor or blender. You then rub the paste on the chicken and let it marinate for 2-4 hours.
When making the couscous you first partially cook the grain then hold it to the side. In a pan you brown the chicken then use the pan to finish cooking the couscous.
For the final step you transfer the couscous to an oven safe dish and add the chicken. You then bake covered for 20-25 minutes then uncovered for 20-25 minutes, or until chicken is done. Enjoy!
Roasted Pork Tenderloin With Black Bean-Chorizo Ragu
I realized I have not cooked a pork dish in quite some time. When I was looking through a magazine I saw a picture of a black bean and chorizo ragu and thought it would pair very well with pork tenderloin. I looked up a few recipes and combined them to make up the this recipe.
It is best to marinate the pork for at least 4-6 hours but you can get away with 2 hours. Before putting the pork in the oven you will brown it on all sides in a pan.
By browning the pork it seals in moisture, shortens the amount of time it will spend in the oven, and preps the pan for cooking the ragu.
While the pork cooks in the oven you will cook the ragu in the pan that your browned the pork in. First you will cook the peppers and onions, until soft.
Then you will add in the chorizo and cook until finished.
Finally you will add the beans, chicken broth, and tomato paste and reduce liquid by half.
Finally you serve the ragu over the pork tenderloin. This recipe is quite simple and looks and tastes great. Follow the link below for the full recipe. Enjoy!
Chicken with Spicy Ginger Soy Reduction
I recently experimented with creating an Asian inspired sauce for chicken. I was surprised at how this sauce turned out, reducing the soy sauce brings develops a very savory flavor in this sauce and the addition of the garlic chili sauce lends a nice heat. The only downside to this sauce is that it is a bit thin, to fix this you need to add some flour to bring it to your desired consistency. You can serve this dish with Spicy Ginger Noodles and snow or snap peas.
Cooking Classes Week 4: Fish
Week 4 has been my favorite class so far. First we were taught how to scale and skin a fish. Then, instead of following a recipe from the book the chef taught us a few techniques how to cook fish; grilling, sauteing, and butter roasting. After going over these techniques we were able to experiment with seasonings and sauces to pair with the fish.
I chose to butter roast snapper fillets. I seasoned the snapper with white pepper, salt, cayenne pepper, dill, and Spanish paprika. I then preheated the pan. As the pan was heating I lightly coated the fish with canola oil, then when the pan was hot I placed a tablespoon of oil in the pan. I then placed the fish in the pan, turning the heat down after 30 seconds. When the fish turned white halfway through I flipped the fish and added 4-5 tablespoons of butter to the pan and turned down the heat. As the butter melted I basted the fish with the butter for 1-2 min until the fish was done, squeezing lemon juice over the fish at the very end.
After removing the fish from the pan I drained out most of the butter and added a chopped shallot and garlic. I then deglazed the pan with white wine and reduced it by 3/4. After reducing the wine I added spinach and sauteed the spinach. I served the fish over the spinach.
Beef Stroganoff
Last Night I made the Beef Stroganoff recipe we were given at the cooking class on Monday night. To warn you in advance this recipe is all about taste, not so much on being healthy. It calls for quite a bit of heavy cream and sour cream. This dish is very rich and is perfect for a cold day. I’m a bit short on time so I will update this post and add the recipe next week. I’m away this weekend so there will not be any posts for the next few days.
Valentines Day Dinner Ideas

Penne Pasta in Vodka Cream Sauce
Pan Seared Duck Breast in Honey Balsamic Pan Sauce
Steak Dinner: Show her you are the master of the grill and pick your favorite steak, or her’s. Season it with kosher salt and pepper and grill to your desired finish. Serve it with a baked potato, salad, or other vegetable. You can never go wrong with a well prepared steak dinner.
Honey Mustard Pork Tenderloin: I’ll give you the shortcut for this recipe, longer recipe will be a blog post later. Marinate the pork in honey mustard dressing overnight. Cook in oven at 350 degrees F for 20-24 min or until done. While pork is cooking take spinach, garlic, shallot, olive oil, lemon juice, and whole grain mustard put in pan and saute spinach until wilted. Serve pork with spinach and wild rice. This is a very simple recipe with great flavor.
Siracha Shrimp Scampi
This Siracha shrimp scampi is a very simple yet very delicious dish. With just a handful of ingredients you get big flavor and while it does have some heat to it the lemon zest gives this dish a very refreshing finish. The sauce tastes very similar to a fra diavlo sauce and goes well served over pasta. This dish also makes a great appetizer if served on skewers. If you are short on time and are looking for a dish that brings the heat and big flavor I recommend trying this dish.
Parmesean Truffle fries with a Garlic Aioli
I know it’s been a few days since the Superbowl but here is the third dish I made on Sunday. I hand cut the fries and cooked them in the oil I used for the fried chicken. To cook the fries, fry them for 6-8 min then remove them from the oil and allow to cool. When ready to eat throw them back into the hot oil for 1 min. The oil should be between 350-375 degrees F. After you make the fries you can serve them however you wish. I sprinkled them with white truffle oil and Parmesan cheese and served them with a mellow garlic aioli I made the day before. You could also sprinkle them with old bay or melted cheese.
